Ingredients

  • 2 T active dry yeast
  • 1/4 cup plus 1 T warm water
  • 1 cup milk
  • 3 eggs
  • 1/2 cup sugar
  • 1/2 cup oil
  • 5 1/2 cups flour, divided
  • 2 tsp salt
  • melted butter for topping

Instructions

  • In a small bowl (or the bowl of a stand mixer) combine the yeast and warm water. Cover and let the yeast dissolve for about 10 minutes.
  • Heat the milk until just warm — not scalding.
  • In a large bowl or in a stand mixer, whisk the eggs, sugar, and oil. Stir in the warm milk and the yeast mixture. Add the salt, then add flour one cup at a time, mixing or kneading well between additions. Start with 4 1/2 cups of flour and add more as needed to form a soft, stretchy, slightly tacky dough. Avoid adding too much flour. Once the dough is formed, knead about 5 minutes by hand or less with a mixer.
  • Cover the dough with plastic wrap or the mixer lid and let it rise in a warm spot until doubled, about 2 to 3 hours.
  • Lightly grease a 12 x 18 inch cookie sheet and set aside.
  • Punch the dough down and turn it onto a lightly floured surface.
  • Divide the dough into three equal portions. Roll each portion into a circle and cut each circle into eight triangles, like pizza slices. Roll each triangle from the wide end toward the point and place the rolls point-side down on the prepared pan.
  • Cover with a clean dishcloth and let the rolls rise until doubled, about 15–20 minutes.
  • Preheat the oven to 400°F (200°C). Bake the rolls 5 minutes on the bottom rack, then move to the center rack for an additional 4–6 minutes until golden. Remove from the oven and brush generously with melted butter.
