Roasting mushrooms concentrates their natural juices and gives them a rich, caramelized taste. If you love mushrooms, this is a must-try side.

I often roast mushrooms because the high-heat method brings out deep, savory notes — sometimes I eat half the pan before it even reaches the table!

The texture is juicy and tender, and the spices add a simple but savory boost. These roasted mushrooms are a close rival to air fryer mushrooms for my favorite preparation.

How to make easy roasted mushrooms:

Start by quartering whole mushrooms and placing them in a bowl. You’ll want about 24 ounces of mushrooms, which will cook down; this amount serves roughly four as a side.

Add sea salt, pepper, garlic powder, onion powder, thyme, and olive oil. Toss with your hands or a spoon until every piece is evenly coated.

Preheat the oven to 425°F (220°C). Roasting at high heat helps the mushrooms caramelize and shortens the cook time.

Spread the seasoned mushrooms on a baking sheet in a single layer and roast for 10 minutes. Remove the pan, stir or flip the mushrooms, then roast another 10–15 minutes until the moisture has evaporated and the mushrooms are juicy and browned.

Serve warm alongside your favorite main dish or mix into pasta, grain bowls, or salads.
