Ingredients

  • 7 large eggs
  • 4 oz (1 cup) shredded cheddar cheese
  • 4 1/2 oz (4 to 5 slices) deli-sliced ham, chopped
  • 4 oz (4 to 5) mini sweet peppers, chopped
  • 38 grams (1/4 cup) red onion, chopped
  • 1 oz baby spinach, torn into small pieces
  • 46 ml (3 TBS) coconut milk
  • 1 tsp salt
  • 1/2 tsp each pepper, garlic powder, onion powder, paprika
  • 56 grams (2 slices) keto bread, cubed
  • Sour cream, salsa or other toppings of choice (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a 4-quart casserole dish and set it aside. In a large bowl, whisk the eggs until smooth and uniformly yellow. Add the shredded cheddar, chopped ham, chopped mini peppers, diced red onion, and torn baby spinach. Stir until the ingredients are evenly distributed throughout the eggs.
  • Whisk in the coconut milk, salt and the dry seasonings (pepper, garlic powder, onion powder, paprika) until fully combined. Pour the egg mixture into the prepared casserole dish, then gently fold in the cubed keto bread so it disperses evenly.
  • Spread the mixture into an even layer and bake for 20 to 25 minutes, or until the eggs are set and the top is lightly golden. Remove from the oven and let rest for at least 5 minutes before slicing. Serve warm and top individual portions with sour cream, salsa or other favorite toppings if desired.
