Dalia Khichdi cooked with bulgur, lentils and vegetables makes a healthy, comforting one-pot meal that’s light, filling and easy to prepare.

Ingredients

  • cup Dalia (or Bulgur)
  • cup Yellow moong dal (husked split mung)
  • ½ cup Cauliflower florets (small)
  • cup Cubed carrots
  • ¼ cup Green peas
  • ¼ cup Peanuts
  • 1 tsp Whole cumin seeds
  • 2 tbsp Ghee (clarified butter) or oil
  • 1 tbsp Grated ginger
  • 1 tsp Turmeric powder
  • Salt to taste

Instructions

  • 1. Wash the dalia and moong dal well. Chop vegetables and set aside.
  • 2. Set Instant Pot to Sauté (High). Add ghee or oil and cumin seeds; let them sizzle.
  • 3. Add chopped vegetables and peanuts (reserve peas), turmeric and grated ginger; sauté briefly.
  • 4. Add rinsed dalia and moong dal and stir. Pour in water to cover the ingredients.
  • 5. Pressure cook for 3 minutes with the vent sealed. After cooking, perform a quick release.
  • 6. Open lid, add green peas, simmer for 1 minute on Sauté (Normal). Garnish with ghee and serve hot.

Stove Top Method

  • Use the same ingredients. Sauté on medium-high heat, transfer to a pressure cooker and cook for 2 whistles on medium-high. Immediately release pressure and serve.

Notes

1. Adding peas at the end helps them retain color and texture, but you can add them earlier if you prefer.

2. A 2:1 ratio of dalia to moong dal works well for texture (two parts dalia to one part dal).

3. Substitute oil for ghee if you prefer or for a vegan version use vegan butter or a neutral oil.

4. Wash dalia and moong dal thoroughly until water runs clear.

5. You can add other vegetables such as bottle gourd, ridge gourd, potatoes, green beans or butternut squash.

6. Garnish with shallow-fried cauliflower florets for added texture if desired.
