Inside-Out S’more Bars are rich, gooey brownies topped with graham crackers, chocolate bars and marshmallows — seriously delicious.

Summer is nearly here, and what better way to celebrate than with Inside-Out S’mores Bars? These are an oven-friendly twist on classic campfire s’mores — all the flavors you love without the smoke smell. Our family adores s’mores; when we visit my parents’ cabin, making s’mores is always a highlight. The kids get creative with flavor combinations (Starbursts have made an appearance — don’t ask), but these bars stick to the timeless trio: graham crackers, chocolate and marshmallows.
The best part is how simple they are. You only need four ingredients, and they come together quickly. The only challenge is waiting for them to bake and cool enough to slice. The result is fudgy, gooey, and chocolatey with a pleasant graham-cracker crunch — one bite and you’ll be hooked.

Ingredients
- 1 box prepared brownie mix (I used Duncan Hines)
- 9 graham cracker sheets
- 2 extra-large (7 oz) Hershey’s milk chocolate bars, broken into rectangles
- 1 1/4 cups mini marshmallows
Instructions
- Preheat oven to 350°F. Lightly spray a 9 x 13-inch baking pan with nonstick spray.
- Prepare the brownie mix according to the package directions.
- Spread half of the brownie batter evenly in the prepared pan; it will form a thin layer. Arrange graham cracker pieces on top, breaking them to fit as needed.
- Place the pieces of chocolate bars on top of the graham crackers, leaving small gaps between pieces.
- Scatter the mini marshmallows over the chocolate, keeping them a bit away from the pan edges. Very carefully spread the remaining brownie batter over the marshmallows, fully covering them. This step takes patience—work slowly so the marshmallows stay in place.
- Bake for 25–30 minutes, or until the brownies are almost set. Let cool completely before cutting into bars. Enjoy!
Notes
You can bake these in an 11×7-inch pan for thicker bars; they’ll need additional baking time. I plan to try the smaller pan next time — thicker bars are fantastic.
