  • Choose the chocolate you prefer. Dark chocolate gives a richer, less sweet result; use milk chocolate if you like sweeter peanut butter cups.

Ingredients

  • 6 ounce
    dark chocolate melting wafers
  • 1/2 cup
    creamy peanut butter
  • 1/3 cup
    peanut butter chips

Instructions

  • Line 12 cavities of a mini cupcake pan with mini cupcake liners.
  • Melt 2 oz of chocolate in a glass bowl over a simmering pot of water, stirring with a spatula. When nearly melted, remove from heat and stir until smooth.
  • Spoon about 1/2 teaspoon of melted chocolate into each liner, using the back of the spoon to press chocolate up the sides to coat the liner.
  • Refrigerate for about 5 minutes until the chocolate has hardened.
  • In a separate glass bowl over simmering water, melt the peanut butter chips with the peanut butter, stirring until fully combined and smooth.
  • Remove the pan from the fridge and fill each chocolate cup with about 2 teaspoons of the peanut butter mixture.
  • Refrigerate again for about 5 minutes until the filling firms up.
  • Melt the remaining chocolate in the first bowl over simmering water, stirring until smooth.
  • Top each peanut butter-filled cup with about 1 teaspoon of melted chocolate to seal.
  • Chill until completely hardened, or let set at room temperature. Store in an airtight container at room temperature.
