Grinch Cookies

Inspired by the classic tale “How the Grinch Stole Christmas,” these soft, chewy crinkle cookies are bright green, tender, and festive. They make a cheerful addition to holiday cookie trays, classroom parties, or gift boxes.

Ingredients

  • 1 (15.25 oz.) box French vanilla cake mix
  • 1/3 c. vegetable oil
  • 2 lg. eggs
  • 4 drops green food coloring
  • confectioner’s sugar for rolling
  • Jumbo heart-shaped sprinkles

Instructions

  • Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper and set them aside.
  • In a large bowl, use an electric hand mixer to combine the cake mix, vegetable oil, eggs, and green food coloring. Mix until smooth and evenly colored. Cover the dough and chill it in the refrigerator for 15–30 minutes to make it easier to handle.
  • Scoop about 1 tablespoon of dough and roll it into a smooth ball. Generously roll each ball in confectioners’ sugar so they are fully coated. Place the sugared dough balls on the prepared baking sheets, spacing them about 2 inches apart. Press one jumbo heart-shaped sprinkle into the center of each dough ball.
  • Bake the cookies for 8–10 minutes, until they are set but still soft in the center. Avoid overbaking; the cookies will continue to firm up as they cool on the hot baking sheet.
  • Allow the cookies to rest on the baking sheet for 3–4 minutes, then transfer them gently to a wire rack to cool completely.
  • Cook’s note: If any cookies spread more than desired, reshape them gently with a spatula while still warm, before they cool completely.
