I created this recipe after spotting the cutest tiny strawberries at the market. Their bright fresh flavor inspired a simple cupcake that highlights real fruit, no boxed mixes or artificial extracts required. The result is a tender, lightly sweet cupcake with a true strawberry taste that pairs beautifully with many frostings.

Strawberry cupcakes ingredients

The ingredients below yield about 12–14 cupcakes. Use fresh ripe strawberries for the best flavor; frozen can work in a pinch but thaw and drain first.

  • 1 ½ cups (180g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (1 stick / 115g) unsalted butter, softened to room temperature
  • ¾ cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • ½ cup (120mL) strawberry purée (about 1 cup whole strawberries blended)
  • ½ cup (120g) sour cream or plain yogurt (sour cream gives extra richness)
  • 1 teaspoon pure vanilla extract
  • Pink food coloring (optional, for a more vibrant color)
  • Your favorite frosting (cream cheese, vanilla buttercream, chocolate buttercream, or strawberry ermine)

How to make strawberry cupcakes

  1. Preheat and prepare. Preheat the oven to 350°F (175°C). Line a 12‑count cupcake tin with paper liners and set aside.
  2. Mix dry ingredients. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Cream butter and sugar. In a large bowl, beat the softened butter and sugar until fluffy and no dry sugar remains. This can be done with an electric mixer (about 1–2 minutes) or by hand (2–3 minutes).
  4. Add the egg. Beat the egg into the butter and sugar until combined.
  5. Add wet ingredients. Stir in the strawberry purée, sour cream or yogurt, and vanilla. If you want a brighter pink color, add a few drops of food coloring until you reach the shade you like.
  6. Combine wet and dry. Add the dry ingredients to the wet mixture and fold together gently until just combined. Avoid overmixing to keep the cupcakes tender.
  7. Portion and bake. Divide batter among the lined cups, filling each about two‑thirds full. Bake in the center of the oven for 15–20 minutes, or until a skewer inserted into the center comes out clean.
  8. Cool before frosting. Let cupcakes cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before frosting.
  9. Frost and decorate. Once cooled, pipe or spread your chosen frosting. Top with thinly sliced fresh strawberries if desired.

Strawberry cupcake storage

Store cupcakes in an airtight container. At room temperature they stay fresh for up to 4 days; in the refrigerator they will keep for about a week. Chilled cupcakes will be slightly firmer — allow them to sit at room temperature for 20–30 minutes before serving if you prefer a softer texture. If your frosting contains perishable dairy (cream cheese, fresh cream), refrigerate to keep it safe.

Notes and tips

  • Making the purée: To make ½ cup strawberry purée, blend about 1 cup whole hulled strawberries (roughly 8–10 medium berries) until smooth, then measure out ½ cup for the recipe. If the purée is very watery, drain briefly to concentrate flavor.
  • Frosting options: These cupcakes pair well with cream cheese frosting, vanilla or chocolate buttercream, or a light strawberry ermine frosting. Choose a frosting that balances sweetness and lets the strawberry flavor shine.
  • Color and presentation: Fresh strawberries naturally tint the batter a pale pink; a few drops of pink food coloring will deepen the hue if desired. Garnish with a small strawberry slice or a sprinkle of freeze‑dried strawberry powder for extra visual appeal.

Equipment

Basic equipment needed: 12‑count muffin/cupcake tin, paper liners, mixing bowls, whisk or electric mixer, measuring cups and spoons, and a wire rack for cooling.
