Ingredients

  • 3/4 cup (1 1/2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 2/3 cup Guinness
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 4 cups minute oats
  • 1/4 cup dark cocoa powder
  • 1 package instant chocolate pudding mix (3.4 oz)

Instructions

  • Add butter, sugar, and Guinness to a large pot and bring to a rolling boil. Keep at a rolling boil for 2 minutes—this step is crucial for proper setting.
  • Remove from heat and immediately stir in vanilla, salt, oats, cocoa, and instant chocolate pudding mix until fully combined. Drop large spoonfuls onto wax or parchment paper and allow to set for about an hour.

Notes

Maintaining a rolling boil for 2 minutes is essential. Undercooking prevents the cookies from setting; overcooking makes them dry and crumbly.

Cookies may not set well on humid or rainy days.

Adjust the texture: add a little more Guinness if the mixture is too dry, or more oats if it’s too loose. The mixture should spread slightly but not run when dropped onto parchment.
