Ingredients

  • 15 egg roll wrappers
  • 4 C apples, peeled, cored and diced
  • 1/3 C brown sugar
  • 2 Tbs salted butter, diced
  • 1 Tbs sugar
  • 2 tsp cinnamon
  • 1 tsp lemon juice
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 tsp cloves
  • 2 Tbs cornstarch

Cinnamon sugar

  • 1 c sugar
  • 3 Tbs cinnamon
  • Oil for frying

Instructions

  1. In a medium saucepan combine the apples, brown sugar, butter, sugar, cinnamon, lemon juice, nutmeg, salt, and cloves. Stir and simmer over medium heat for about 8 minutes until the apples are tender. Remove from heat and stir in the cornstarch to thicken; let cool slightly.
  2. Place a wrapper on a clean surface with one corner pointing toward you. Spoon 2–3 tablespoons of the apple mixture into the lower middle. Fold the bottom corner over the filling, fold the two side corners inward like an envelope, brush the top corner lightly with water, and roll to seal. Repeat with remaining wrappers.
  3. Heat about 3 inches of oil in a large stockpot to 350°F (175°C). Fry 3–4 rolls at a time for about 2 minutes, flip, then fry another 2 minutes until golden. Remove to a paper towel-lined plate.
