Spaghetti squash wasn’t love at first bite for me. It’s mild in flavor, and when people started using it as a pasta substitute, I stayed loyal to regular pasta. I also wasn’t sure how best to cook it.

Each method has advantages, but my favorite is the air fryer. It cooks quickly and lets you season the squash halves before roasting for more flavor. For a noticeable seasoning, use at least 1/2 teaspoon per half; 1 teaspoon is better.

Step 1
Trim the top and bottom of the squash with a sharp knife so it sits steady.
Pro tip: If the skin is very tough, puncture it in a few places and microwave 3–4 minutes to soften before slicing.
Step 2
Slice the squash lengthwise into two even halves for consistent cooking.

Step 3
Spoon out seeds and stringy pulp from the cavity with a metal spoon. For stubborn strands, kitchen scissors work well.

Step 4
Brush the flesh and outer skin with olive oil and season with salt, pepper, onion powder and garlic powder.
Step 5
Place the halves face down in the air fryer basket and cook at 375°F for about 15 minutes, depending on squash size.

Check after 15 minutes by gently scraping the cavity with a fork. When strands lift easily, it’s done.
Step 6
Let the squash cool slightly, then use a fork to scrape the flesh into noodles. Serve in the shells or on a plate.

Yes. Roasting whole takes longer and you can’t season the flesh beforehand. Whole squash tends to be moister. If roasting whole, pierce the skin several times to allow steam to escape.

Yes. Cooked squash keeps in an airtight container in the refrigerator for up to 5 days. Double-bag in zip-top freezer bags if needed. To reheat, place face down on a baking sheet in a 350°F oven for 10–15 minutes, then scrape into strands.
