If you want a simple, flavorful way to eat more vegetables, try these Air Fryer Buffalo Cauliflower Bites. They’re surprisingly tasty, very easy to make, and require only two ingredients.

I’ve been using our Ninja Foodi air fryer for quick lunches and snacks, and it’s made preparing vegetables more convenient. These buffalo cauliflower bites are a great example: I tossed a whole head of cauliflower in sauce, air fried it, and had a crunchy, spicy snack in under 30 minutes.

I don’t usually reach for cauliflower unless it’s part of a roasted vegetable medley or a raw veggie tray, but I enjoyed these bites so much I’ll be making them again. The air fryer crisps the edges while keeping the centers tender, and the buffalo sauce gives the florets a tangy kick.

A few benefits of cauliflower:

  • Aids digestion
  • High in antioxidants
  • Anti-inflammatory properties
  • Supports the immune system

These Air Fryer Buffalo Cauliflower Bites are an easy way to enjoy those benefits while treating yourself to a flavorful snack. The technique is straightforward: wash and cut the cauliflower into bite-sized florets, toss with buffalo sauce, and air fry until crisp.

Start by preparing the cauliflower: remove the leaves and core, then cut the head into evenly sized florets so they cook uniformly.

Place the florets in a bowl and pour in buffalo sauce—Frank’s RedHot is a classic choice—but any similar hot sauce will work. Toss until the cauliflower is evenly coated.

Arrange the florets in a single layer in the air fryer basket. Set the air fryer to 390°F (about 200°C) and cook for 10 minutes. After the first 10 minutes, shake the basket or flip the florets to promote even browning, then cook another 10 minutes. If you prefer, you can bake them on a sheet pan in a conventional oven, but the air fryer gives a quicker, crispier result.

Once cooked, you can toss the florets with a little extra buffalo sauce if you like them saucier, or serve them as-is alongside a creamy dip such as ranch or blue cheese. They’re delicious hot and make a great appetizer, side dish, or snack.
