Preheat oven to 350 degrees. Grease a 9 x 13 baking pan with butter or cooking spray. Set aside.

In a medium bowl, whisk together all dry ingredients until well combined.

Add the wet ingredients and mix well with a wooden spoon or rubber spatula.

Fold in the apples and pecans. The batter will be VERY thick.

Spoon batter into the prepared baking dish, spreading with the back of a spoon or gently patting with your hands.

In a small bowl, whisk together sugar and cinnamon and sprinkle evenly over the top of the cake.

Bake at 350 degrees for about 50 minutes, or until a toothpick inserted in the center comes out clean. The top will become a crunchy crust as it bakes.

Serve warm with ice cream, whipped topping, or caramel, or simply enjoy the cake on its own.
