Apple Pie Avocado Toast with seasonal apples, walnuts, and 2-ingredient date caramel. Perfect for a healthy breakfast or snack!
Ingredients
- 15–20 soft Medjool dates (soak in boiling water for 10 minutes to soften)
- 1/2 cup water + 1 TBSP increments until desired consistency
- 4 slices of bread, toasted (gluten-free if needed)
- 2 avocados
- 1 lemon, squeezed
- Himalayan sea salt
- 1 apple, any kind
- 1/2 cup walnuts (optional to toast 8 minutes at 350°F)
Instructions
- To make the date caramel, add softened dates to a food processor and pulse until finely chopped.
- Add water and blend until the mixture forms a paste. Add water 1–2 TBSP at a time and pulse until you reach a smooth, drizzly consistency or thicker spread, depending on preference.
- Transfer the date caramel to an airtight container and refrigerate for up to two weeks.
- Halve and score the avocados, then squeeze lemon over the flesh and sprinkle with a pinch of Himalayan sea salt. Let them sit briefly to marinate.
- Toast the bread and core and thinly slice the apple.
- Scoop and smash about 1/2 an avocado onto each slice of toast. Arrange apple slices on top, sprinkle with walnuts, and drizzle with date caramel. Garnish with hemp hearts if desired and serve immediately.
Notes
Add more water for a thinner, drizzleable caramel or use less for a thick, spreadable paste. If prepping ingredients in advance, toss apple slices with lemon juice to prevent browning.
