How to make Beetroot Salad

Step 1: Trim the stems from the beets and place them in cold water. Bring to a boil, then simmer for about 30 minutes or until tender. You want some resistance when piercing with a knife so the beets hold their shape.

Step 2: While the beets cook, whisk together extra virgin olive oil, cider vinegar, garlic powder, finely chopped dill and a generous pinch of salt and pepper in a small bowl or jar.

Step 3: When the beets are tender, drain and transfer them to a bowl of cold water to cool. The skins will slip off easily—rub gently with your hands to remove them.

Ingredients

  • 500 g raw beetroot
  • ½ cup feta I used vegan
  • ½ cup walnuts
  • 1 small handful fresh dill
  • 3 tbsp extra virgin olive oil
  • 2 tbsp cider vinegar
  • 1 tsp garlic powder
  • Salt and black pepper to taste

Instructions

  • Cut stems from beetroot and place beets in cold water. Bring to a boil, reduce heat and simmer for about 30 minutes until tender but not falling apart.
  • Prepare the dressing by combining olive oil, cider vinegar, garlic powder, finely chopped dill and salt and pepper in a small bowl or jar. Whisk to emulsify.
  • Drain cooked beets and plunge into cold water to cool slightly. Rub skins off with your hands; they should slip away easily.
  • Slice each beetroot into quarters. For less boiling time, quarter before cooking and reduce simmer to 15–20 minutes.
  • Toss chopped beets with walnuts and the dill dressing in a large bowl. Top with crumbled feta and serve.

Tip:

  • If you prefer roasted beets, roast whole beets at 200°C (400°F) for 45–60 minutes until tender, then peel and slice.
