Why Make Homemade Chocolate Mixes?

Store-bought mixes are convenient but often pricier and contain additives. Making your own allows you to control sweetness and quality, customize flavors (mint, raspberry, caramel, or extra cocoa), and save money. These mixes also make thoughtful, budget-friendly gifts when packaged in jars with a simple label.

Chocolate Brownie Mix

Brownies are ideal for unexpected guests, school treats, or a cozy dessert night. This dry brownie mix stores well and transforms into rich, fudgy brownies with minimal effort.

Ingredients (dry mix):

  • 1 1/4 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 2 cups granulated sugar

Storage: Combine the dry ingredients, mix thoroughly, and store in an airtight container for up to three months at room temperature. For longer storage, refrigerate.

To prepare: Preheat the oven to 350°F (175°C). To each 3 cups of dry mix (or the full batch if using all), add:

  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup melted butter

Stir the wet ingredients into the dry mix with about 50 spoon strokes or beat briefly with a mixer for 30 seconds. Pour the batter into a greased 9 x 13-inch pan and bake for 22–25 minutes, until a toothpick inserted near the center comes out with a few moist crumbs. Yield: about 18 brownies.

Hot Cocoa Mix

Homemade hot cocoa is quick to make and infinitely customizable. This simple mix yields a creamy, chocolatey drink and can be doubled or tripled for larger households or frequent cocoa lovers.

Ingredients (dry mix):

  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup granulated sugar
  • Pinch of salt

Storage: Combine the dry ingredients and store them in an airtight container. This keeps well in the pantry for weeks; for longer freshness, refrigerate.

To prepare (per batch):

  • 4 cups milk
  • 3 cups water

In a large saucepan, whisk the dry mix with a small amount of the milk to form a smooth paste, then add the remaining milk and the water. Heat over medium, stirring until small bubbles form at the edges—do not boil vigorously. Adjust sweetness or chocolate intensity to taste. This recipe yields about 12 servings and can be flavored with a splash of vanilla, a spoonful of caramel, or a few drops of peppermint extract for seasonal variations.

Quick and Easy Chocolate Cake Mix

Homemade cake mixes save money and eliminate unnecessary preservatives. Keep this chocolate cake mix on hand for birthdays and celebrations—just add a few wet ingredients when you’re ready to bake.

Ingredients (dry mix):

  • 1 1/2 cups cake flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 cup granulated sugar
  • 1/2 teaspoon salt

Storage: Store the combined dry ingredients in an airtight container for up to three months in the pantry or up to five months refrigerated.

To prepare: When ready to bake, preheat the oven to 400°F (205°C). Grease and flour an 8-inch round cake pan. Add to the dry mix:

  • 1 cup strong brewed coffee, warm
  • 1/3 cup neutral oil
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon balsamic vinegar

Whisk the wet ingredients into the dry mix until just smooth. Pour into the prepared pan and bake 25–30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before serving. The warm coffee enhances the chocolate flavor without tasting like coffee.

Tips for Best Results

  • Use high-quality cocoa powder for a richer flavor; natural or Dutch-processed will change taste slightly, so adjust sugar to preference.
  • Label jars with mix name, date prepared, and instructions for mixing and baking to make gift-giving easy.
  • Include optional add-ins (chocolate chips, chopped nuts, or dried fruit) in a separate small bag so the mix stores longer and recipients can personalize their treats.
  • For gift jars, layer dry ingredients attractively and include a ribbon and baking directions.
