Ingredients
- 15 cups water
- 1/4 cup dried hibiscus flowers (jamaica)
- 2 tamarind pods, peeled and cleaned
- 3 cinnamon sticks
- 4-5 whole cloves
- 6 guavas, chopped
- 2 apples, chopped
- 1 piloncillo cone (or dark brown sugar)
- 1/2 cup prunes
- 1/2 cup raisins
- 1 cup rum, optional

Prepare the tamarind by removing it from the pods. Pull away any fibers and discard seeds and membranes so only the pulp remains. Rinse briefly if needed to remove debris.

Pour the water into a large pot and bring it to a gentle simmer. Add the cinnamon sticks, hibiscus flowers, prepared tamarind, and whole cloves. Reduce the heat to medium-low and let the mixture simmer for about 20 minutes to extract color and spice.

Remove the pot from the heat and strain the liquid through a fine mesh strainer into a clean pot or heatproof bowl. Press gently to extract as much liquid as possible, then discard the solids to keep the punch clear and smooth.

Return the strained liquid to the pot and add the chopped guavas, chopped apples, piloncillo (or brown sugar), prunes, and raisins. Bring the mix back to a simmer, lower the heat, and cook gently for about 30 minutes so the fruit softens and the flavors meld.

Turn off the heat and, if you want an adult version, stir in the rum at the end so the alcohol and aroma remain bright. Taste and adjust sweetness if necessary.

Ladle the ponche into warm mugs, ensuring each serving includes some of the softened fruit. Serve immediately while hot. Leftovers refrigerate well and reheat gently before serving.
Notes
- Be sure to devein and thoroughly clean tamarind pulp before simmering to avoid bitter fibers and seeds in the final drink.
- Straining the initial tea base removes coarse particles and results in a smoother, more visually appealing punch.
- Piloncillo adds a deep, molasses-like flavor; dark brown sugar works well as a convenient substitute if piloncillo is unavailable.
- This punch can be made ahead of time and reheated slowly on the stove. Store refrigerated for up to three days and reheat gently to preserve delicate flavors.
- If adding alcohol, stir in the rum off the heat to maintain its aroma. Offer the rum on the side for guests who prefer not to drink alcohol.
