Why this recipe works

This vegan curry balances the natural sweetness of sweet potato with a rich satay base for satisfying texture and depth of flavour. Roasting or baking the curry briefly after you combine the ingredients concentrates the flavours and gives the dish a warm, slightly caramelised finish. The recipe is naturally filling thanks to the sweet potato and chickpeas, and it stores and freezes well, making it ideal for meal planning.

Ingredients to make Sweet Potato Satay Curry

Ingredients to make Sweet Potato Satay Curry laid out on a white marble background.
  • Sweet potato – adds natural sweetness and creamy texture when cooked.
  • Red onion – softens and caramelises to build the curry base.
  • Garlic – for aromatic depth.
  • Mild curry powder, paprika, turmeric – these spices create a rounded, warming flavour.
  • Pinch of chilli flakes – optional, for gentle heat.
  • Chickpeas – drained; provide protein and texture.
  • Coconut milk – lends creaminess and a hint of coconut flavour that pairs well with peanut butter.
  • Vegetable stock cube or pot – adds savoury depth.
  • Peanut butter – the key satay element; use smooth or crunchy depending on preference.
  • Rice – to serve (optional).

See the recipe card below for exact quantities.

Substitutions

  • Chickpeas – swap for other canned beans such as cannellini or butter beans.
  • Sweet potato – butternut squash or white potato can be used, though texture and sweetness will vary.
  • Peanut butter – if you have an allergy, try almond or cashew butter for a similar richness.
  • Grain to serve – serve with quinoa, bulgur or your favourite grain for a different nutritional profile.

Variations

  • Deluxe finish: Serve with chopped coriander, lime wedges and roasted peanuts for texture and brightness.
  • Mild for kids: Reduce or omit chilli flakes and use a milder curry powder.
  • Spicier version: Use a hot curry powder or increase chilli to taste.
  • Non‑vegan option: Add cubed chicken during the oven stage, or finish with cooked prawns.

Recipe FAQs

Why bake the curry?

Baking concentrates the flavours and gives a slightly roasted character to the sweet potato and sauce. If you prefer, you can simmer the curry on the hob for 20–25 minutes until the sweet potato is soft.

Is the curry spicy?

The base recipe is mild. Add more chilli flakes or a hotter curry powder if you want more heat.

Can I add more protein?

Yes — add tofu, cooked prawns or chicken before baking, or serve with protein‑rich grains like quinoa.

What if I have a peanut allergy?

Swap peanut butter for another nut butter such as almond or cashew, or use a seed butter if necessary.
