HOW TO MAKE PANERA’S TEN VEGETABLE SOUP IN 3 EASY STEPS
This soup comes together in three main steps: cook the grain, prep the vegetables, and simmer everything in a large pot. Below are the simplified steps; see the recipe card for exact measurements and timings.
Step 1 — Cook the rice
Prepare the sprouted brown rice (or your chosen grain) according to package directions and set it aside.
Step 2 — Prepare the vegetables
Wash and chop onion, carrots, celery, zucchini, bell pepper, and poblano. Zest the lemon and slice wedges for serving.
Pro tip: Pre-cut vegetables or a simple chopper speeds prep time considerably.
Step 3 — Cook
- Heat olive oil in a large soup pot over medium heat.
- Add the chopped onion, carrots, celery, zucchini, bell pepper, and poblano. Sauté 5–10 minutes until the onion is translucent.
- Add garlic, lemon zest, and the dried spices; cook another 1–2 minutes, stirring so the spices don’t burn.
- Add tomato paste and sauté a few minutes until it begins to caramelize.
- Pour in vegetable stock, scraping the pot to lift any browned bits.
- Add garbanzo beans, fire-roasted tomatoes with juice, corn, coconut aminos (or gf soy sauce), rice vinegar (or lemon juice), and bay leaves.
- Bring the soup to a boil, then reduce to a simmer and cook 15–20 minutes, until vegetables are tender (carrots will take longest).
- Stir in the cooked rice or quinoa and fresh spinach; remove from heat and let the spinach wilt in the hot soup.
HOW TO SERVE
Garnish each bowl with a lemon wheel or wedge and a sprig of parsley or cilantro if desired. For a little heat, add red pepper flakes. The soup pairs beautifully with bread; a sprinkle of grated Parmesan works for non-vegans.

- ¾ cup diced red bell pepper

- 6 cups gluten free vegetable stock
- 2 tablespoons coconut aminos or gluten free soy sauce
- 1 tablespoon rice vinegar
- 1 cup frozen corn
- 1 can garbanzo beans drained and rinsed
- 3 15 oz cans of fire roasted diced tomatoes with juice
- 2 bay leaves

Method
