This slow cooker Fiesta Chicken is a simple, flavorful weeknight meal that’s perfect for feeding a family or making extra for the week. Use it as a topping for nachos, fill burritos, stuff tacos or enchiladas, or serve over rice for a quick bowl — the options are endless.

This recipe has become a staple in my kitchen because it’s easy, low-fat, and incredibly versatile.

Here’s how simple it is to make.
Start with about 2 to 2 1/2 pounds of trimmed chicken breasts and place them in the slow cooker.

Add two cans of diced tomatoes, undrained — you can use Rotel for a spicier version.

If you like a bit of sweetness and texture, add corn. It’s optional, so include it to taste.

This is a true dump-and-go recipe — my kids even help because it’s that easy.

Add a drained and rinsed can of black beans for protein and fiber.

Stir in one package of taco seasoning and mix everything together. If you prefer to make your own seasoning, homemade blends work great here.

Cover and cook on high for 4–5 hours or on low for about 8 hours. The chicken will become very tender and shred easily.
When it’s done, shred the chicken with two forks and stir to combine with the juices and vegetables. That’s it — ready to serve.
My favorite way to enjoy Fiesta Chicken is in rice bowls: spoon hot rice into bowls, top with the shredded chicken, sprinkle with cheese, and add sour cream and guacamole if you like.

A dollop of sour cream and a scoop of guacamole complement the dish nicely.
