Quinoa and Feta Salad
This quinoa and feta salad is bright, nutritious, and full of Mediterranean flavors. It’s easy to prepare ahead and makes a great side dish or light main for gatherings.
Serves 6–8
Ingredients:
6 cups cooked quinoa
1 cup crumbled feta cheese
1 cup chopped Roma tomatoes
½ cup chopped celery
½ cup diced seedless cucumber
½ cup each chopped red, yellow, and orange bell peppers
¼ cup chopped scallions
½ cup quartered artichoke hearts
½ cup toasted pine nuts
¼ cup chopped flat-leaf Italian parsley
1 tablespoon fresh chopped thyme
2 tablespoons fresh chopped basil
Juice of 2 lemons
2 tablespoons apple cider vinegar
¼ cup organic honey
¼ cup extra virgin olive oil
½ teaspoon kosher or sea salt (adjust to taste)
1 tablespoon freshly cracked black pepper
Directions:
Combine all ingredients in a large bowl and toss thoroughly so the dressing coats the quinoa and vegetables evenly. Let the salad rest for 5 minutes, toss again to redistribute the dressing and flavors, then serve.
