Classic carrot cake flavor reimagined as a stackable waffle (chaffle) with a creamy cream cheese frosting. Light, moist, and full of warm spices—this has quickly become a favorite for keto-friendly celebrations.

Carrot Chaffle Cake ingredients

  • 1/2 cup carrot, shredded
  • 1 egg
  • 2 tablespoons butter, melted
  • 2 tablespoons heavy whipping cream
  • 3/4 cup almond flour
  • 1 tablespoon walnuts, chopped
  • 2 tablespoons powdered sweetener
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin spice
  • 1 teaspoon baking powder

Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • 1/4 cup powdered sweetener
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons heavy whipping cream (adjust for desired consistency)

Carrot Chaffle Cake Recipe Instructions

  1. Whisk the dry ingredients: almond flour, cinnamon, pumpkin spice, baking powder, powdered sweetener, and chopped walnuts.
  2. Stir in the wet ingredients: shredded carrot, egg, melted butter, and heavy cream until the batter is evenly combined.
  3. Preheat a mini waffle maker. Spoon about 3 tablespoons of batter into the preheated maker and cook for 2½–3 minutes, until set and lightly golden. Repeat until you have six chaffles.
  4. For the frosting, beat the softened cream cheese with powdered sweetener and vanilla. Add 1–2 tablespoons heavy cream as needed to reach a spreadable consistency.
  5. Assemble the cake by stacking the chaffles and spreading frosting between each layer. Finish with a thin layer of frosting on top and a few extra chopped walnuts if desired.

Ingredients

Carrot Chaffle Cake ingredients

  • 1/2 cup carrot shredded
  • 1 egg
  • 2 T butter melted
  • 2 T heavy whipping cream
  • 3/4 cup almond flour
  • 1 T walnuts chopped
  • 2 T powdered sweetener
  • 2 tsp cinnamon
  • 1 tsp pumpkin spice
  • 1 tsp baking powder

Cream Cheese Frosting

  • 4 oz cream cheese softened
  • 1/4 cup powdered sweetener
  • 1 tsp vanilla extract
  • 1-2 T heavy whipping cream depending on the consistency you prefer

Instructions

  • Mix your dry ingredients – almond flour, cinnamon, pumpkin spice, baking powder, powdered sweetener, and walnut pieces.
  • Add the wet ingredients- grated carrot, egg, melted butter, heavy cream.
  • Add 3 T batter to preheated mini waffle maker. Cook 2 1/2 – 3 minutes.
  • Mix frosting ingredients together with a hand mixer with whisk attachment until well combined.
  • Stack waffles and add frosting between each layer!
