Prepare The Latte Mix

This recipe yields two servings and can be scaled up as desired. For every two servings, use a 16-ounce (pint) jar or other airtight container with a lid.

Brew 1 cup of very strong coffee or prepare espresso if you have it. Pour the hot coffee into the pint jar. Immediately add 2½ tablespoons of raw honey and stir until the honey dissolves completely into the hot coffee.

Very strong brewed hot coffee is added to a pint sized canning jar.

Next, add ¾ cup unsweetened plain almond milk and stir until combined. The liquid should nearly reach the top of the jar.

Almond milk is added and stirred into the coffee mixture.

Chill in the Refrigerator

Seal the jar with a flat lid and band, label it, and refrigerate. The latte mix will keep well for 2–3 days. Chilling the mix before adding ice prevents the drink from becoming watered down by warm coffee when you prepare a glass.

Assemble a Honey Almond Iced Latte

When you’re ready to enjoy a cold latte, fill an 8-ounce glass with about ½ cup crushed ice. Pour half the chilled latte mix over the ice (this recipe makes two 8-ounce servings). If you like, top with a small spray of whipped cream and a light sprinkle of ground cinnamon—Saigon cinnamon adds an extra warm note, but regular cinnamon works fine.

This low-calorie iced latte is quick to prepare, convenient to store, and perfect for an afternoon pick-me-up. Keeping the mixed latte in the fridge gives you a consistent, cold base that won’t dilute when poured over ice.
