This chicken thighs recipe in a creamy spinach and mustard sauce is rich in flavor and ready in about 20–25 minutes.

Chicken Thighs in Spinach Mustard Cream Sauce

Ingredients
8 boneless, skinless chicken thighs
1 tbsp olive oil
1 tbsp whole grain mustard
1 tbsp Dijon mustard
1 tbsp minced garlic
2 tbsp chopped onion
2.6 oz cream cheese, cut into cubes
¼ cup sour cream
3 cups fresh spinach
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
Directions

1. In a small bowl, combine the smoked paprika, salt and pepper. Pat the chicken thighs dry and season both sides with the spice blend.
2. Heat the olive oil in a skillet over medium-high heat. Add the chicken thighs and cook, flipping every few minutes, until both sides are golden brown and the chicken is cooked through. Remove the chicken to a plate and leave any pan juices in the skillet.
3. Reduce heat to medium. In the same skillet, add the whole grain mustard, Dijon mustard, minced garlic, chopped onion, cream cheese and sour cream. Stir or whisk until the cream cheese melts and the sauce becomes smooth and starts to thicken.
4. Add the spinach to the sauce and cook until it wilts and incorporates into the sauce.
5. Return the chicken to the skillet and spoon the sauce over each piece. Heat briefly so the chicken warms through and absorbs some sauce.
6. Serve immediately, spooning extra sauce over the chicken.

Serve this with steamed vegetables, cauliflower rice, or a simple side salad for a low-carb meal.
