Mug cakes have quickly become one of my favourite quick treats — a perfect single-serve dessert made in a mug and cooked in the microwave. I’ve tried variations like Salted Caramel and Banana Chocolate Chip in the past, and this recipe is a simple, delicious Strawberry Mug Cake that’s ideal for using up strawberries that aren’t quite good enough to eat on their own. Served with pouring cream or a scoop of ice cream, it delivers that classic strawberry-and-cream pairing.
Ingredients
1 tbsp butter
1 egg
2 tbsp raw sugar (white sugar works fine)
1/2 tsp vanilla extract
1/4 cup self-raising flour
4–6 diced strawberries
Method
1. Place the butter in a large microwave-safe mug and microwave for about 10 seconds to soften. Add the egg, sugar, vanilla and flour, and stir gently with a fork until just combined. Top with the diced strawberries.
2. Microwave on high for 2 minutes. Check the top — it should spring back gently when touched. If the centre still feels a bit wet, microwave for an additional 20 seconds and check again.
Eat straight from the mug, or run a knife around the edge to loosen the cake and turn it out onto a plate. Serve warm with pouring cream or ice cream for a comforting, quick dessert.
