There’s something special about leaving an orchard with a bucket full of crisp, hand-picked apples. I haven’t been apple-picking this year yet, but I’m planning to go soon. Dan often reaches the high, perfect fruit while I search the lower branches for the hidden gems.

But the real fun begins when you get those apples home and suddenly feel the urge to turn them into everything apple. I always tell myself I’ll make a classic pie someday — and then I don’t. That’s where these Apple Pie Avocado Toasts with Easy Date Caramel come in.

They capture apple-pie flavor without baking and work for breakfast, a snack, or even a light dessert.

What You Need to Make Apple Pie Avocado Toasts

I’ve loved different apple varieties over the years. As a kid I favored Pink Lady, then I had a long Honeycrisp phase in my twenties, and most recently I’ve been loyal to Fujis. A recent purchase of Pink Pearl apples surprised me when I sliced them open to reveal vibrant pink flesh—an instant upgrade for photos and flavor exploration.

When you photograph food, surprises like a pink apple are a joy. They encourage a “go with the flow” attitude, even for someone who likes to control every detail.

How to Make Apple Pie Avocado Toasts

The apple-and-avocado combo is one I return to every fall. These toasts are simple to assemble and full of layered flavor. The avocado is prepped with lemon and sea salt to brighten and deepen the taste—an easy trick that makes the toast more vibrant.

For the date caramel: blend soft Medjool dates with a little water until you reach a thick, spreadable paste or a thinner drizzle, depending on how much water you add. The caramel stores well in the fridge and is handy on many things.

How to Serve Apple Pie Avocado Toasts

These toasts come together quickly: toast bread, smash avocado with lemon and a pinch of sea salt, layer thin apple slices, sprinkle walnuts, and finish with the date caramel. Garnish with hemp hearts or any small seeds you like, and serve right away so the apples stay crisp.

You’ll likely have leftover date caramel—here are ideas for using it:

  • Spread on apple rounds with peanut butter and chocolate chips or raisins.
  • Drizzle into smoothies, shakes, or coffee for natural sweetness.
  • Spoon over pancakes instead of maple syrup.
  • Use as an accompaniment to desserts or enjoy it by the spoonful.

Enjoy!

Description

Apple Pie Avocado Toast with seasonal apples, walnuts, and 2-ingredient date caramel. Perfect for a healthy breakfast or snack!

Ingredients

  • 15–20 soft Medjool dates (soak in boiling water for 10 minutes to soften)
  • 1/2 cup water + 1 TBSP increments until desired consistency
  • 4 slices of bread, toasted (gluten-free if needed)
  • 2 avocados
  • 1 lemon, squeezed
  • Himalayan sea salt
  • 1 apple, any kind
  • 1/2 cup walnuts (optional to toast 8 minutes at 350°F)

Instructions

  1. To make the date caramel, add softened dates to a food processor and pulse until finely chopped.
  2. Add water and blend until the mixture forms a paste. Add water 1–2 TBSP at a time and pulse until you reach a smooth, drizzly consistency or thicker spread, depending on preference.
  3. Transfer the date caramel to an airtight container and refrigerate for up to two weeks.
  4. Halve and score the avocados, then squeeze lemon over the flesh and sprinkle with a pinch of Himalayan sea salt. Let them sit briefly to marinate.
  5. Toast the bread and core and thinly slice the apple.
  6. Scoop and smash about 1/2 an avocado onto each slice of toast. Arrange apple slices on top, sprinkle with walnuts, and drizzle with date caramel. Garnish with hemp hearts if desired and serve immediately.

Notes

Add more water for a thinner, drizzleable caramel or use less for a thick, spreadable paste. If prepping ingredients in advance, toss apple slices with lemon juice to prevent browning.
