It sounds surprising, but traditional fudge can really be made with just three ingredients: full-fat milk, sugar and unsalted butter. This is a classic recipe I remember from my childhood — straightforward and always satisfying.

The method is simple: heat the milk, sugar and butter together in a large saucepan until the sugar dissolves and the mixture thickens. Once boiling, continue cooking until the mixture darkens and pulls away from the bottom of the pan. To test readiness, drop a small amount into a glass of cold water — if it forms a soft ball, it’s ready to remove from the heat.

After removing from the heat, let the mixture rest briefly, then beat it to encourage the fine sugar crystals that give fudge its creamy texture. No special equipment is required — just a large pan, a lined tin or tray, and a sturdy spoon.

What flavour fudge can I make?

This recipe is a versatile base that takes many flavour variations. 3 Ingredient Fudge (Traditional Fudge Recipe)

Make this three-ingredient fudge as a perfect homemade treat. It’s gluten-free, egg-free, nut-free and soya-free (unless you add optional ingredients that contain those allergens).

Ingredients

  • 300 ml full fat milk
  • 350 g sugar
  • 100 g unsalted butter
  • Zest of 2 clementines — optional (for Christmas fudge)
  • 1/2 tsp ground ginger — optional (for Christmas fudge)
  • 1/2 tsp ground cinnamon — optional (for Christmas fudge)
  • 2 tsp amaretto or brandy — optional (for Christmas fudge)

Instructions

  1. Place the milk, sugar and butter in a large saucepan. Use a pan with plenty of room because the mixture will boil up when heated. Warm over low to medium heat, stirring every minute until the sugar dissolves and the butter melts.
  2. Once the sugar has dissolved, increase the heat and bring the mixture to a steady boil. Stir continuously to prevent sticking and burning.
  3. Keep boiling until the mixture thickens and darkens slightly. You’ll notice it pulling away from the bottom of the pan as you stir. To check, drop a little into cold water — if it forms a soft ball, it’s ready.
  4. Remove the pan from the heat and stir in any optional flavours (zest, spices, liqueur or fruit). Let the mixture cool for about five minutes.
  5. Beat the mixture with a wooden spoon for around 10 minutes until it loses its sheen and starts to thicken and set.
  6. Quickly pour the fudge into a lined tin about 20 cm x 20 cm, or onto a lined baking tray if you don’t have a tin. Smooth the surface and allow to cool completely.
  7. Once cooled and set, cut into pieces and store in an airtight container.
