Even when the weather is chilly, I keep craving this Vegan Guinness Caramel Ice Cream Float. It’s quick to assemble and feels special with minimal effort.
There are two simple ways to serve it:
- Scoop the ice cream into glasses, pour in the stout, then top with whipped cream and a drizzle of caramel.
- For a smoother, milkshake-like drink, blend the beer and ice cream together first, then finish with cream and caramel.

Ingredients
The essentials are a dark stout and dairy-free ice cream. Guinness has been vegan-friendly for some years now, but any stout or dark beer you enjoy will work.
There are many good non-dairy ice creams available. A caramel-flavoured option is ideal here — I used Jude’s salted caramel, but other brands or homemade vegan salted caramel ice cream would be delicious.
- Guinness (or another stout of your choice)
- Non-dairy ice cream — caramel flavour recommended
- Caramel sauce — store-bought or a quick homemade vegan caramel
- Vegan whipped cream — coconut whipped cream or a shop-bought dairy-free alternative
- (Optional) Irish whiskey — a tablespoon in the cream or caramel adds warmth

Step by step

Prepare the caramel sauce and vegan whipped cream if you’re making them from scratch. Both can be made quickly; otherwise use ready-made versions.
Optional: stir a tablespoon of Irish whiskey into the whipped cream or caramel for a boozy accent.

Place two to three scoops of vegan ice cream into each pint glass.

Slowly pour the Guinness over the ice cream, filling the glass to about three-quarters to leave room for foam and the cream topping.


Dollop the vegan whipped cream on top and drizzle with caramel, gently swirling it into the cream for a pretty finish.

Serve immediately and enjoy. If you prefer a blended texture, combine the beer and ice cream in a blender before spooning into glasses, then add the cream and caramel on top.

- 500 ml (1 bottle) Guinness or another stout
- Vegan whipped cream
- Vegan caramel sauce
- (Optional) 1 tbsp Irish whiskey
Instructions
- Make or prepare the vegan caramel sauce and dairy-free whipped cream. Add a tablespoon of Irish whiskey to either for extra flavour, if using.
- Divide 2–3 scoops of vegan ice cream between two pint glasses.
- Slowly pour Guinness over the ice cream until each glass is about three-quarters full.
- Top with whipped cream and drizzle with caramel, gently swirling to combine.
- Serve immediately. For a blended version, combine the beer and ice cream in a blender before topping with cream and caramel.
Notes
*I used Jude’s Salted Caramel in this recipe, but other non-dairy caramel ice creams work well. If you’re making caramel sauce from a larger recipe, consider halving it unless you plan to use the rest later. For whipped cream alternatives, many supermarkets carry dairy-free options.
