Anything made in the slow cooker is a favorite in our house. Sunday is our family game day — we watch football most of the day. With a football-loving husband and three sons, I spend my time in the kitchen preparing food everyone will enjoy. These chicken fajita sliders are easy, hands-off, and always a hit.

Food prep:

Because these are sliders, I slice the peppers and onions a bit smaller than usual. Slice them as you normally would, then cut those slices in half so they fit the slider buns without being too large.

How to make Slow Cooker Chicken Fajita Sliders:

Step one: Add chicken breasts, sliced bell peppers, diced onion, and fajita seasoning to the slow cooker. Cook on high for 3–4 hours or on low for 7–8 hours, until the chicken is cooked through and the vegetables are tender. Remove the chicken and shred it with two forks.

Step two: Pile the shredded chicken and vegetables onto slider buns and top with Pepper Jack or your favorite sliced cheese. If you prefer melted cheese, place the assembled sliders in a 350°F oven for 3–5 minutes until the cheese melts.

Ingredients

  • 2 pounds chicken breasts
  • 2 cups bell peppers, sliced
  • 1 cup onion, diced
  • 1 oz fajita seasoning
  • 12 slider buns
  • 6 slices Pepper Jack cheese (use 1/2 slice per slider)

Instructions

  1. Add chicken breasts, bell peppers, onions, and fajita seasoning to the slow cooker. Cook on high 3–4 hours or low 7–8 hours, until chicken is cooked through and vegetables are tender. Remove chicken and shred with a fork.
  2. Fill slider buns with the shredded chicken and vegetables, top with cheese, and serve. For melted cheese, bake assembled sliders at 350°F for 3–5 minutes until cheese is melted.
