Ingredients

  • teaspoons baking soda
  • ½ teaspoon salt
  • 8 large eggs

  • In a food processor or large bowl, combine the almond flour, egg white protein powder, cream of tartar, baking soda, and salt. Pulse or whisk until evenly mixed.
  • Add the eggs and process or beat until the batter is smooth and uniform.
  • Transfer the batter to a greased 9 x 5 inch loaf pan and smooth the top.
  • Bake at 350°F (175°C) for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the loaf to cool for about 2 hours before removing it from the pan; this helps the texture set and makes slicing easier.
  • Slice and serve. Toasting improves the flavor and texture.
