Ingredients
- 4 slices bacon
- 2 cups cubed butternut squash
- 2 small zucchini or yellow squash, sliced
- 3 cups dark leafy greens of choice
- 2 fried eggs
- 1 ripe avocado, sliced
- Optional for topping: cilantro or microgreens
Sauce Ingredients:
- 2 scoops Vital Proteins Collagen Peptides
- 1 tablespoon Frank’s Red Hot® sauce (or other Whole30-approved hot sauce)
- 1 lime, juiced
Instructions
- Mix the collagen peptides with mashed avocado, hot sauce (to taste), and lime juice until smooth to make the sauce.
- Cook the bacon in a large skillet until crisp. Transfer to paper towels to drain and cool, then crumble.
- In the remaining bacon grease, cook the cubed butternut squash over medium heat until softened, about 10 minutes. Add the sliced zucchini and cook until vegetables begin to brown, about 10 more minutes. Add the greens and sauté until just wilted, about 2 minutes. Stir in the crumbled bacon and season with sea salt and black pepper. Divide the vegetables between two bowls.
- Fry the eggs in the same skillet and add one to each bowl. Top with sliced avocado.
- Blend the prepared sauce ingredients if needed and drizzle over the bowls.
- Garnish with cilantro or microgreens, if desired, and serve.
